My kids are bananas about bananas and anything that’s made from bananas – banana milkshake, banana bread, banana pancakes, banana fritters! And we are fortunate enough to have a never ending supply of homegrown, organic bananas. But, very often, they ripen faster than we can consume them. And my kids love it when that happens, because that means there’s going to be banana pancakes or banana bread on the menu soon!

The batter is prepared by simply mixing everything in a blender and then stirring in the flour and baking powder. Yes, it’s that simple!

Healthy Banana Pancake Recipe (4 ingredient Banana Pancakes)


INGREDIENTS

2 big ripe bananas
2 tablespoons milk
4 tablespoons flour (Maida or All purpose flour)
1⁄2 teaspoon baking powder
Oil for frying
Optional ingredients
1 cardamom powdered
pinch of salt
1 teaspoon sugar (or as required)

METHOD

  1. In a blender, blend together the bananas and milk (and the powdered cardamom, sugar and salt, if you are using them)
  2. Pour the mixture into a large bowl, add to it the baking powder and stir well.
  3. Add to this the flour, in portions, stirring well to prevent the formation of lumps. (Stop adding flour once the mixture is of the right consistency. Alternatively, if the mixture is too thin, add some more flour.)
  4. Cover the bowl and allow the batter to stand for about 15 minutes.
  5. After 15 minutes, heat some oil in a pan. When hot, pour a spoon full of the batter onto the pan and spread it out slightly to form a thick round pancake.
  6. Fry on one side till golden brown and bubbles appear on top. Then flip them over and fry the other side till golden brown.
  7. Drain the pancakes on a paper towel and serve hot with honey or jam of your choice.

Can you use overripe bananas for pancakes?

Overripe bananas are perfect for making pancakes. It’s a shame when people throw away overripe, blackened bananas because they think they are spoiled. These overripe bananas are great for cooking. Overripe bananas are much sweeter and totally eliminates the need for adding sugar to your pancake mixture. Adding overripe bananas to your pancake batter will makes your pancakes sweeter and tastier.

So, don’t throw away those blackened bananas ever again. Go ahead and make yourselves some tasty and healthy banana pancakes!

Should pancake batter be thick or runny?

Your banana pancake batter should be of dropping consistency. It may be a bit lumpy, but it should pour easily and not be too runny. If your pancake batter is too thin and runny, you will get flatter/thinner crepe-like pancakes. And if it’s too thick, it won’t spread properly on the pan and you could end up with thick, undercooked pancakes.

You can adjust the thickness of your batter by adding milk/water or flour, as required. If your batter too thick, add some milk/water (a tablespoon at a time) and if it’s too runny, add a bit of flour to get the right consistency.

Should you let banana pancake batter rest?

Yes! I do not know the theory behind it, but what I do know is that allowing the banana pancake batter to rest yields better, lighter and fluffier pancakes. Ideally, I recommend to let the batter rest for at least 10 -15 minutes before cooking. But, the longer you allow it to rest, the better.

Do you cook banana pancakes on high or low heat?

These banana pancakes need to be cooked on low or medium heat. While the pan does need to be hot when you pour in the batter, the cooking needs to be done on low or medium heat. If you cook these banana pancakes on high heat, they will cook unevenly and have burnt edges and be undercooked on the inside.

How many minutes do you cook pancakes?

Cook the first side until bubbles form in the batter. Once the bubbles have formed and popped and the batter is full of holes, and the underside has turned brown, it is ready to flip. This usually takes 3-4 minutes. Once you flip the pancake over, cook the other side for 1-2 minutes, until that too turns brown.

What’s the trick to fluffy pancakes? Why aren’t my pancakes fluffy?

  • Avoid overmixing

When adding the dry ingredients to the wet ingredients, mix them until they are ‘just’ incorporated with one another. Don’t overmix, it’s okay to have lumps. If you mix the batter until it is smooth, the batter will get doughy and the resultant pancakes won’t be fluffy.

  • Use baking powder

Adding baking soda to your pancake batter will give you light, airy and fluffy pancakes. Before you use baking powder, be sure to check it’s shelf life and test it to ensure that it is still effective. Otherwise, it will not serve it’s purpose and your pancakes will be flat and lifeless!

  • Use Egg

If you don’t mind using them, eggs can not only make your pancakes tastier, they also add texture and make them fluffier. Use the whipped egg white trick to get thicker, tastier and fluffier pancakes everytime!

Why do my pancakes come out flat?

Too much liquid can result in an overly-wet batter, causing your pancakes to come out flat. Your pancake batter should be of a thick and pourable consistency and not too runny. You could remedy this by adding a little flour to your batter to fix the issue. If this still doesn’t help, there might be a problem with the baking powder.

Should pancakes be gooey in the middle?

Ideally speaking, pancakes are not meant to be gooey in the middle. If your pancake is gooey in the middle, it could mean that it is undercooked. If the pan is too hot, your pancakes will cook fast on the outside and brown too quickly but won’t get done in the middle.

Are banana pancakes supposed to be mushy?

Banana Pancakes are supposed to be soft and fluffy, but not mushy. If your pancakes come out mushy, it could either be that you have cooked them on high heat, due to which the pancakes are undercooked. Another reason for soft, mushy pancakes is less flour or an excessively wet batter.
